PUMPKIN PIE IN A CAKE PAN
Crust
24 Graham Crackers (1½ cups crushed)
1 tsp. Cinnamon
½ C. Sugar
½ Margarine
¾ C. White Sugar
8 oz. Cream Cheese
2 Eggs
Crush graham cracker. Combine graham crackers with cinnamon and ½ cup sugar and melted margarine. Press in a 9 by 13 inch pan. Beat rest of sugar, cream cheese and eggs together. Pour over crust and bake at 350 ~ for 20 minutes. Cool cake
Topping
2 C. Pumpkin
3 Egg separated
1 C. Sugar
½ C. Milk
½ tsp. Salt
1 tsp. Cinnamon
Envelope Plain Gelatin
¼ C. Water
Cook pumpkin, egg yolks, ½ cup sugar, milk, salt and cinnamon. Cook until thick. Mix one envelope gelatin with water. Add to pumpkin. Beat egg whites with remaining sugar. Add to pumpkin. Spread on cake when cool. Cover with cool whip
