BANANA NUT LOAF

2½ C. Flour

1 C. Sugar

½ tsp. Salt

½ C. Butter or Margarine

2 Eggs

1 tsp. Baking Powder

1¼ tsp. Baking Soda

3 or 4 Very Ripe Bananas mashed

½ C. Buttermilk

¼ tsp. Nutmeg

1 C. Pecans or Walnuts chopped

Cream sugar, salt and butter thoroughly in large mixing bow. Beat eggs into mixture, one at a time, until light and fluffy. Sift together flour, baking powder, baking soda and nutmeg. Combine bananas and milk. Add parts of dry and liquid ingredients alternately to creamed ingredients, blending well after each addition. Add nuts, mix briefly. Turn into greased 9 by 5 inch loaf pan. Bake at 350~ 75 to 80 minutes or until cake tester comes out clean.

If you don't have any buttermilk, you can use 1½ teaspoon of vinegar in enough milk to make ½ cup of liquid.
